Escovitch is the traditional pickle of Jamaica. Long strips of onion, peppers, courgettes & carrots are preserved in a sugar and vinegar mix - with a good dose of chillis added too!
Traditionally served on white fish, Escovitch is very versatile and can be served warmed or cold. It can make any dish more exciting - from fish fingers to roast chicken.
